Herbs de Province Roasted Chicken

*On my last trip to France I came back with several fresh bags of "Herbs de Provence". I gave many as gifts to my happy friends and came up with recipes to share the flavors of Provence that I love so much. This delicious Roasted Chicken recipe really lets the flavors of the Herbs shine.
1 roasting Chicken (Preferably Organic)
1/4 Cup olive Oil
1/2 Lemon
3 Cloves Garlic
5 T Herbs de Provence (At most food stores and at Sur La Table (www.surlatable.com)
Salt and Pepper
Wash Chicken well and dry with paper towels. Salt Chicken inside and out and cover and let sit in the fridge for at least 2 hours or over night, if you have time. Remove from Fridge and rinse and dry. Preheat oven to 450. Drizzle Olive Oil all over the outside of the Chicken and a bit inside. Sprinkle with Herb de Provence, Salt and Pepper on all sides. Season the inside cavity with Salt, Pepper and Herb de Provence and place the Lemon and Garlic inside as well. Now the Chicken is ready to go in the preheated oven for 20 minutes at 450 then reduce the oven to 350 and continue roasting for one more hour or as needed till the Chicken is done to perfection. Take out of oven and let the Chicken rest a few minutes before cutting to allow the juices to remain in the Chicken. This helps to keep it very tender and moist. Then serve with *Potatoes roasted along side the Chicken, if you like.
*To Roast the Potatoes just rub them well with Olive Oil and sprinkle Salt, Pepper and a little Herb de Provence on them and lay them around the Chicken as it roasts.
